Career

Born in Hamada City, Shimane Prefecture. Previously worked as a researcher at Shimane Prefecture Agricultural Technology Center and as an Associate Professor at Hiroshima Bunkyo Women's University. Appointed as Associate Professor at Shimane University in 2011, and has been serving as Professor at the Faculty of Human Sciences, Shimane University since 2018.

Message

As a professor at the Faculty of Human Sciences, Shimane University, I lead the Food Product Development Laboratory. I conduct research focusing on food functionality, especially antioxidant properties, and am advancing research on food development utilizing regional unused resources and hypoallergenic foods.

I welcome students interested in food science and food product development. I also accept working professionals aiming to obtain a doctoral degree. Research themes will be determined after thorough consultation.
